Coconut is one of my favourite and most useful ingredient ever. As well as being such a multi purpose fruit, it contains numerous health promoting properties and can easily be made into brilliant dairy alternatives; whether it's coconut oil, coconut milk, coconut cream or even homemade coconut yoghurt.
Now that I am back living in Kenya, I have unlimited supplied of these beauties and today I have decided to use their immature flesh to make a deliciously creamy coconut yoghurt.

The flesh is rich in fibre to boost digestive health and also encourages long-term satiation, keeping you fuller for longer. Coconut water is another health booster; rich is electrolytes it makes the most refreshing and hydrating natural sports drink out there.
